Texas Tornado

Jacob has officially turned into a Texas Tornado around our house. Today, he has been into toilet paper, pulled tissue, after tissue out of a Kleenex box (and then proceeded to tear those into itty-bitty pieces), grabbed fistfuls of dirt out of potted plants in the house, pulled over the one fake plant I have (thankfully it was fake), climbed up on the elliptical, headed for the toilet plunger and scrubber (yuck-glad to have caught him in time), tried to help me with spraying his feces off of a cloth diaper into the toilet (gross-his little hands on the edge of the toilet), eaten some sand, and pulled out all the tupperware lids. Did I mention he is only 8 1/2 months old? How fun-he's just so quick to move from one thing to the next. He'll be keeping me on my toes for certain. I'd best go rest now before the "storm" wakes.

Quote of the morning

"I think we need to get rid of our baby because he keeps pulling my hair." When I asked where we would take him, Ashley said, "To the doctor's office." I guess she things he needs reconfigured. I asked her what they would do with him there and she said they'd play with him a lot. I asked if we could go get him again later and she said we could, after a while.

Well, after having two sick kiddos for the past week, I determined that we were going to get out of the house today...even if it nearly killed me. Well, it didn't kill me and we were able to get out and run a ton of errands (hooray), as well as stop by some friends house to play and completely blow nap time for them and us (oops). It felt so nice to be out in the warm sun and accomplishing a few things that have been put on hold since everyone got sick.

The one thing we did not accomplish, however, was the renewal of my driver's license. When we arrived, they were serving customer number 29. After about 5 minutes of ZERO movement through their office, I decided that our number (41) was not going to be called anytime soon. So, I thought we'd go ahead and drop off our recycling and then come back to see just how far the numbers had moved. So, after our 15 minute interlude, we returned to find that the DMV office was now serving customer number 32. Are you serious?, I thought to myself. Knowing we had much more effective ways to use our time, we ditched that errand for another day. I'm wondering what could possibly take so long. I guess when I brave the wait one of these days in the very near future, I'll be able to tell you what is so time consuming in there. Let the unsolved mystery be solved...

Turkey-It's what's for dinner

I made some yummy turkey burgers last night and they tasted so good that I thought I'd pass along the recipe to y'all.

Turkey Burgers
1.5 pound (give or take) of ground turkey
1 pkg. Onion soup mix
1 egg
1/2 cup plain, dry bread crumbs
1/2 tsp. pepper

Mix this all together with your hands, form into balls then patties, and grill/cook. I cooked ours in our george foreman wannabe grill and they turned out great. Be sure to check the insides before serving, as they seem to take a bit longer than regular burgers to cook all the way through-and Lord knows we don't want to eat any raw turkey.

This yields 7-8 burgers.

We ate them plain (without the buns and fixings) and used some ranch beans and green beans and corn as sides.

Oh yes, let me include my recent idea for bread crumbs. I started making my own by toasting those irritating heels of the bread loaves that keep getting passed over as you use up loaf after loaf of bread. Just toast them to crispy (but not burnt) and then crumble them up and store them in a ziplock baggy or air-tight container. Whala-you have homemade bread crumbs and less wasted bread too.

Spring 2010

Welcome Spring 2010. We woke up this morning to 3 1/2 inches of snow. How fun! And tomorrow, the high is forecasted to be 63, with 73 being Tuesday's high. I love the snow, but I think that I wouldn't complain about some temps in the 70s either.

Celebrating 7 Years

Today Joe and I celebrated 7 years of marriage. What an adventure it has been. We've had our highs and lows, but we've seen God's hand show up in big ways through our journey together. We also have been blown away by one of God's most treasured gifts to a marriage-children. We celebrated our day by taking the kiddos and adventuring on the playground, the trails and in the mud at nearby lake. What a perfect celebration.

Joe-I look forward to growing old with you-but let's just keep acting young for as long as possible, even though our brains rattle when we jump out of trees and our insides spin like never before on the spinning playground toys.

 
 
 
 

Kansas Kiddos

We made a quick trip to Kansas at the end of last week to visit my cousin Julie and her family. We had a great time watching the kids play, visit and watch the kids take turns crying.
